Calle Mayor's Classic Enchilada Casserole

 

27 Corn Tortillas

1/2 Cup Olive/Sunflower Oil

2-3 Cups Shredded Chicken

1 Jar (12 oz) Calle Mayor's Original Sauce

2-3 Cups Cheese or Sour Cream (or Sour Cream Substitute)

1/4 Red Onion Diced

1/4 Cup Chopped Cilantro

1. Heat oil in a large skillet; lightly fry tortillas in hot oil for 2 minutes, flipping them halfway.

2. Pour one jar of Calle Mayor's Original Sauce in the skillet and heat until a low simmer.

3. Dip tortillas in heated sauce and place in a single layer in an 8 or 9 inch baking dish.

4. Scoop chicken into a single layer and lightly sprinkle with cheese. Repeat 2x, skipping the chicken for the final layer.

5. Bake for 25-30 minutes at 375 degrees until bubbling. Top with onion and cilantro and serve hot.

Pavo Asado (Grilled Turkey) Tacos

 

1 Pack (24-36) Corn Tortillas
2-3 LBS Leftover Turkey (Cut into strips)
2 TBSP Olive/Sunflower Oil
1 Jar (12 oz) Calle Mayor's Original Sauce
1 Avocado
1/4 Red Onion Diced
1/4 Cup Chopped Cilantro

1. Marinade 2 to 3 lbs of leftover turkey with
one jar of Calle Mayor's Original Marinade for 4-8 hours.
2. Lightly grease skillet or grill and heat to medium-high.
3. Reheat turkey in hot skillet for about 5-7 minutes.
4. Serve on warm tortillas, topped with finely chopped cilantro,
red onion, avocado, and fresh cranberry sauce.

Chilaquiles Verdes

 

1 (12-16 oz) Bag Tortilla Chips

2 TBSP Olive/Sunflower Oil

4-5 Eggs (Optional)

1 Jar (12 oz) Calle Mayor's Spicy Tomatillo Sauce

1/2 Cup Sour Cream (or Sour Cream Substitute)

1/4 Red Onion Diced

1/4 Cup Chopped Cilantro

1. Heat oil in a large skillet; toss 2 cups of tortilla chips in the hot oil for 5 minutes, or until slightly toasty.

2. Remove chips from heat and set aside.

3. Pour one jar of your favorite Calle Mayor sauce in the skillet and heat until a low simmer.

4. Pour heated sauce over toasted chips and garnish with your favorite protein and finely chopped veggies. Serve warm.

Easy Nachos

1 (12-16 oz) Bag Tortilla Chips

1-1 1/2 lbs Ground Beef (or Meat Substitute)

2 Cups Cooked Pinto Beans

Half a Jar (6-8 oz) Calle Mayor's Original Sauce

1 Cup Lettuce

1 Tomato Diced

1/4 Red Onion Diced

1/4 Cup Chopped Cilantro

1. Lightly brown 1 to 1 1/2 lbs lean ground meat (beef or chicken) in large skillet on medium heat.

2. Pour half a jar of Calle Mayor's Original Sauce over meat and continue cooking on medium-high until sauce is completely absorbed.

3. Arrange large serving platter with tortilla chips, ground meat, pinto beans, tomato, onion, lettuce, and cilantro. Consider topping with cheese, grilled corn avocado, and sour cream. Serve immediately.

Vegetarian Cilantro-Lime Pizza

14-16" Pizza Crust (Outside the Breadbox vegan crust used here)

1/2-2/3 Cup Calle Mayor's Cilantro Lime Sauce

1 Cup Tightly Packed and Roughly Chopped Spinach

3/4 Cup Sliced Mushrooms

1/4 Cup Red or Yellow Bell Peppers

1/4 Medium Red Onion

1-1/2 Cup Shredded Mozzarella Cheese (or Cheese Substitute)

1/4 Cup Chopped Cilantro

1/4 Cup Micro-greens (Radish micro-greens from Evergrow used here) 

1. Preheat oven and prepare your favorite crust according to the package instructions (Some crusts require pre-baking).

2. Toss all vegetables, minus the cilantro and micro-greens, in 1/4 cup of Calle Mayor's Cilantro Lime Sauce.

3. Spread the remaining sauce evenly over the crust and lightly sprinkle with 1/4 cup of cheese.

4. Place the vegetables in a single layer over the entire pizza, cover with the remaining cheese, and bake according to the directions on the crust's package.

5. Sprinkle the chopped cilantro and micro-greens on top of the pizza and enjoy!

Zesty Comfort Soup

Calle Mayor's sauces make great additions to soups and chili. Simply stir-in your favorite flavor during the last 5-10 minutes of cooking.

1. Make (or buy) a pot of your favorite chicken, beef, or vegetable soup.

2. Add one jar of Calle Mayor's sauce for up to 10 cups of soup.

3. Garnish with cilantro and serve hot with sour cream (or vegan cream).

Skillet Potatoes with Kale and Scallions

1. Boil 2 lbs of potatoes and chop into 1 inch pieces.

2. Heat a large skillet with 1/4 cup of oil, saute the potatoes until golden brown, and season with 1/2 tsp of salt.

3. While the potatoes are cooking, chop 1 cup of kale and 1/4 cup of scallions.

4. Remove potatoes from skillet and add 6-8 oz of Calle Mayor's Original or Spicy Tomatillo sauce, and heat to a low simmer.

5. Pour heated sauce over the potatoes, add your favorite cheese or cheese substitute, garnish with the kale and scallions, and serve warm.

Carne Asada Tacos

 

1 Pack (24-36) Corn Tortillas
2-3 LBS 1/4 Inch Thick Steak
2 TBSP Olive/Sunflower Oil
1 Jar (12 oz) Calle Mayor's Original Sauce
1 Avocado
1/4 Red Onion Diced
1/4 Cup Chopped Cilantro

1. Marinade 2 to 3 lbs of 1/4 inch thick flank or skirt steak with
one jar of Calle Mayor's Original Marinade for 4-8 hours.
2. Lightly grease skillet or grill and heat to medium-high.
3. Cook steaks to desired temperature, about 5 minutes per side.
4. Allow steaks to rest for 5 minutes before slicing into thin strips.
5. Serve on warm tortillas, topped with finely chopped cilantro,
red onion, avocado, and fresh salsa.

 

Slow Cooker Shredded Beef Tacos

1. Place 2 to 3 lbs chuck or rib roast in slow cooker.

2. Pour one jar of Calle Mayor's Organic Carne Asada Marinade over the roast.

3. Cook on low for 10 to 12 hours.

4. Serve on warm tortillas, topped with finely chopped cilantro, red onion, and fresh salsa.

 

Ground Meat Nachos

1. Lightly brown 1 to 1 1/2 lbs lean ground meat (beef or chicken) in large skillet on medium heat.

2. Pour half a jar of Calle Mayor's Organic Carne Asada Marinade over meat and continue cooking on medium-high until sauce is completely absorbed.

3. Arrange large serving platter with tortilla chips, topped with cheese, ground meat, black beans, grilled corn, tomato, avocado, sour cream, onion, and cilantro. Serve immediately.

 

Grilled Veggie Tacos

 

1. Grill 2 to 3 cups of zucchini, yellow squash, bell peppers, onion, and mushrooms in lightly oiled, large skillet on medium-high heat.

2. Pour half a jar of Calle Mayor's Organic Carne Asada Marinade over vegetables and continue cooking on medium-high until sauce is completely absorbed.

3. Serve on warm tortillas, topped with avocado, finely chopped cilantro, onion, sliced radish, and fresh salsa.

Huevos Rancheros

 

1. Heat 2 non-GMO corn tortillas in olive oil until slightly crispy (about 1 minute per side) and place on a paper towel-lined plate.

2. Fry two eggs in a pan on medium heat until the whites become crispy and the yoke is still runny.

3. Transfer the fried eggs onto the tortillas and top liberally with Calle Mayor's Organic Carne Asada Marinade. Serve immediately.
